The following afternoon we board our home away from home, the Island Princess, to enjoy her amazing facilities.
Our first port is Puerto Vallarta, Mexico, where we'll be immersed in the colours and swagger of this exotic city. As well as great sightseeing, there'll be time for a tipple when we visit a tequila manufacturer.
After a day at sea, we arrive at the Mexican beach town of Huatulco, known for its nine spectacular bays.
Next in our sights is San Juan del Sur in Nicaragua. After being greeted by a local guide, we'll transfer to Granada, on the shore of Lake Nicaragua, where we'll be able to walk the cobblestoned streets and marvel at the colonial buildings, ancient Spanish fort and restored churches.
Sitting on a long, narrow peninsula, Puntarenas in Costa Rica, is the Central Pacific's largest city. A boat ride on the Tarcoles River will uncover local bird and plant life as well as wildlife, including crocodiles.
The next stop is Fuerte Amador, Panama, a man-made peninsula at the entrance to the Panama Canal.
Our group will enjoy a sightseeing tour of Panama City, including the old town, and later the Miraflores locks where ships transit the Panama Canal. We can take in the history of this man-made wonder at the Canal Museum.
A highlight of the tour is the 77-kilometre cruise along the Panama Canal from the Atlantic Ocean to Pacific Ocean, a journey that takes nine to 10 hours. The canal has been named one of the wonders of the modern world by the American Society of Civil Engineers.
Waiting for us at the other end of the canal is Cartagena in Colombia, acclaimed as one of the most beautiful cities in the world. Inside San Felipe's fort, built in the 1600s to protect the city from invaders, is the Old City, a treasure trove of colonial architecture.
After two nights at sea we bid farewell to Island Princess in Fort Lauderdale for a flight to New Orleans brimming with French heritage and recognised as the home of jazz.
We'll explore the French Quarter including Jackson Square, Royal Street, the French Market and Bourbon Street as well as the Garden District, Audubon Park and the Mississippi River.
Next we head out of town for a thrilling airboat tour of the swamp country to see moss-covered bayous and the unique wildlife of this exotic area.
And what better way to round off a tour than with a farewell dinner aboard a paddlesteamer on the Mississippi River.
