Reminiscent of marmalade made in the home kitchen, Barker's of New Zealand has launched its newest marmalade creation.
The first marmalade by Barker's of New Zealand to hit Australian shelves, the pantry staple is made from a traditional recipe and packed with real, whole fruit, giving it the characteristic chunky fruit bites that marmalade is known and loved for.
A twist on the traditional orange marmalade, Barker's of New Zealand Breakfast Marmalade (RRP $5.30) features grapefruit and lemon, along with their citrus fibres, to create a vibrant, zesty and mildly bitter marmalade.
Proudly produced in the small town of Geraldine at the foothills of the Southern Alps in New Zealand, this premium breakfast marmalade will enhance all food enthusiast's home cooked dishes.
You can add a delightful, vibrant taste to the kitchen table by trying out these delicious ideas:
- . Keep it classic by spreading it over hot buttered toast slices
- . Be creative by using a generous spoonful of ricotta cheese and the marmalade on a slice of bread
- . Bake it in a sweet treat or dessert, such as Barker's Breakfast Marmalade & Coconut cake or a citrus inspired upside-down cake.
- . Make it savoury by adding a little cider vinegar to the marmalade to thin it, add cayenne, salt and pepper and use to baste grilled chicken or protein of choice.
Try Breakfast Marmalade and Coconut Cake
Ingredients
1 1/2 cups Whole wheat flour
3tsp Baking powder
1/2 cup Shredded coconut
1 cup Sugar
2tbsp Barker's Breakfast Marmalade
1tbsp Lemon zest
1 cups Milk
125mg Butter, melted
2 Eggs
2tbsp Icing sugar
2tbsp Lemon juice
1/4 cup Water
Method
Preheat oven to 180C (160C fan forced, 350F, gas mark 4).
CAKE MIX: grease a 20cm round cake tin. Mix all ingredients in a bowl until well combined. Pour batter into the tin. Bake for 40 minutes. When cooled, remove the rim and transfer cake to a cooling rack
SYRUP: combine all ingredients in a small saucepan. Bring to a boil then simmer for about 5 minutes, stirring, until the mixture is reduced and syrupy. Allow to cool to room temperature before serving.
To serve, drizzle syrup over individual cake slices when serving
