TASMANIA'S Woodbridge Smokehouse is known to produce some of the finest smoked seafood in the world.
Now visitors can enjoy the traditionally-smoked ocean trout and Atlantic salmon straight from Tasmania's pristine waters at a new taste house 30 minutes south-east of Hobart.
The Woodbridge Smokehouse is set on a 10-hectare apple orchard. Traditional hand-smoking processes using a mixture of local hardwoods (including the apple orchard shavings) create the delicate and distinctive flavours for which the smokehouse has become globally renowned.
The Taste House, which has stunning water views, is open Monday to Friday 10am-4pm, Saturdays noon-4pm, and by appointment on Sundays.
On Thursday and Friday there is a Go behind the Production tour (for groups of four to eight with bookings essential). Visitors will see how the small team, with more than 75 years' experience between them, follow long-established traditions to fillet, brine, smoke and hand slice the fish.
Tours last about an hour and cost $45 per person including tasting samples.
