THE days may be growing shorter and darker, but a nice way to avoid the winter gloom is with some in-season passionfruit.
Tasty and delicious, passionfruit are a good source of fibre and a source of vitamin C.
This creamy passionfruit curd is the perfect addition to coconut cupcakes, a passionfruit tart or even sandwiched between melting moments.
Creamy Passionfruit Curd
Prep time: 20 mins
Ingredients
- 4 egg yolks
- 1⁄2 cup (110 g) caster sugar
- 50 ml lemon juice
- 3 passionfruit, pulp removed
- 80 g unsalted butter, chopped
Method
1. In a medium saucepan, whisk together yolks and sugar. Add lemon juice and passionfruit pulp and stir to combine.
2. Place pan over medium-low heat and cook for approximately10 minutes, stirring regularly, until thickened.
3. Remove pan from heat, add butter and stir until melted and fully incorporated.
4. Pour into a 250 ml sterilised jar, seal and set aside to cool.
5. Store in fridge for up to two weeks.
