Chicken Sweet and Sour
A delicious recipe with low fat chicken and lots of vegetables from the Victorian Government's Better Health Channel www.betterhealth.vic.gov.au
Chicken - sweet and sour

- Serves:5
Ingredients:
- 500 g diced cooked skinless chicken
- 2 cooked and diced carrots
- 1 chopped capsicum
- 4 stalks chopped celery
- 1 chopped onion
- 1 clove crushed garlic
- 1 teaspoon grated fresh ginger
- 1 teaspoon olive oil
- 1 cup (no added sugar) pineapple pieces
- 1 tablespoon brown sugar
- 1 tablespoon vinegar
- dash reduced salt soy sauce
- 1 tablespoon cornflour
- 1/2 cup water
Cooking method:
- Heat oil in non-stick frypan and fry onion, garlic and ginger for 3 minutes.
- Add capsicum and celery and stir-fry briefly.
- Combine sauce ingredients and add to vegetables.
- Heat over a medium heat and stir until thickened.
- Add cooked carrot and chicken.
- Serve with steamed rice and a salad.
